Healthy Snack Recipes

One of the most difficult things when you are on a diet is finding good recipes. If you cut our certain foods you need to replace them with something that is nutritious but also tastes good so that you will not crave the unhealthy stuff you have been eating. Here are a few recipes that are always on my menu. I hope you enjoy them!

Almond Cookies

    * 200 Grams of Almond Meal
    * Handful of Chopped Nuts (Almond Slivers, Macadamia etc.)
    * Two Tablespoons Xylitol
    * Two Tablespoons Ghee (or Butter)
    * Two Egg Whites

This is a very simple recipe as it only has a few ingredients. You should be able to make it in about 10 minutes. These cookies are so good for you (unless you can not eat eggs or almonds) and on top of that they are absolutely delicious! Mix the 200 grams of almond meal in a bowl with a handful of almond slivers or chopped macadamia nuts. Mix in two tablespoons of xylitol, two tablespoons of ghee or butter and two egg whites. Mix thoroughly and place small portions on baking tray. The dough will seem too moist but the biscuits will harden once they have been cooked and cooled. Bake in a hot oven until the tops turn slightly golden.

Buckwheat Pancakes

    * 1-Cup Buckwheat Flour
    * Dash of Olive Oil or Grape Seed Oil
    * Pinch of Baking Soda
    * Rice Milk or Almond Milk

These can be made in a few minutes and are perfect as a snack or as an addition to a larger meal. Eat them by themselves or add to sweet or savoury dishes. Place buckwheat flour and baking soda in a bowl, add a dash of olive, pour in the milk and mix. Buckwheat flour can take a few minutes to thicken so you will find you will need to add more milk than you think. Pour batter onto a frying pan on medium heat. Flip pancake once first side is brown. Once cooked you can eat it on its own or add a little maple syrup.

Pesto Dip
This great little dip will make any vegetable taste nice. But you don't only have to use it as a dip. You can use it with pasta or as a sauce for fish or chicken.

    * 100 Grams Pine Nuts
    * 1-Cup Basil Leaves
    * 1 Clove of Garlic
    * 2 Tablespoons of Olive Oil
    * Pinch of Salt

This recipe really does not need much explanation. Simply blend all ingredients together with a blender. If you like to do it the old fashioned way you can use a mortar and pestle.
