Finding Alternatives To Milk

You will be surprised at how easy it is to make milk. Once you begin trying almond and rice milk you will never go back to regular milk again! If you are on a budget, rice milk is much cheaper to make then to buy in a store.

Almond Milk
Take one cup of blanched almonds, (Blanching means it has the skin removed. If you need to blanch your almonds put them in a bowl of hot water for an hour before trying to remove the skin) and put them in a hot oven for 10 minutes. Take them out and put them in a bowl of water. Leave them soaking in the fridge overnight. In the morning pour out the water and blend almonds with about 500 ml of pure water. Add another 500 ml of water and add a teaspoon or two of xylitol for sweetness. You can also add a few drops of vanilla essence if you like. Filter milk with a fine sieve or cheesecloth. Store milk in refrigerator.

Rice Milk
I use brown rice for this but you can also use basmati or other kinds of rice. You may like to soak the brown rice in a bowl for 30 minutes first as brown rice takes a little longer to cook than other kinds of rice. Make sure you wash the rice before cooking. Cook 100 grams of rice with 300 ml of water until soft. Take off the heat and add another 300 ml of water and blend until smooth. Add another 600 ml of water and strain with a fine sieve. Mix in a tablespoon of xylitol and store in the refrigerator.
